Tomato Sauce

tomato sauce This tomato sauce recipe is great for using fresh tomatoes.

It is excellent for freezing.

Now you can enjoy your fresh tomatoes all year long.

This sauce is excellent on pasta, pizza and anything you make with tomatoes.




Ingredients:

  • 1/2 cup Vegetable or Olive Oil

  • 4 medium Onions - chopped

  • 1 1/2 teaspoon Pepper

  • 4 Garlic Cloves - minced

  • 12 cups chopped peeled Fresh Tomatoes

  • 3 Bay Leaves

  • 4 teaspoons Salt

  • 2 teaspoons Oregano

  • 1/2 teaspoon Dried Basil

  • 2 6 ounce cans of tomato paste

  • 1/3 cup packed brown sugar


    • Directions:

  • In large Dutch oven, heat oil

  • Saute the onions and pepper until onions are tender

  • Add garlic, tomatoes, bay leaves, salt, oregano and basil

  • Simmer for 2 hours, stirring occasionally

  • Add tomato paste and brown sugar

  • Simmer for an additional hour

  • Remove bay leaves

  • Place sauce in freezer bags. Store in freezer

  • Makes 2 quarts

    • Freeze summer produce and enjoy fresh produce all year long.
